Mixed cabbage salad with mustard dressing. Why not try a simple and healthy salad, using different cabbages, apples and walnuts. The mustard dressing with lime juice is light and nicely compliments the sweet apples and pomegranate seeds, making this crispy cabbage salad especially tasty. Serve as a starter or as a side.

And please, don’t throw away any leftover salad nor dressing. Keep it in the fridge, it will last for days.

Mixed cabbage salad with mustard dressing

Ingredients
Dressing
- 1 dl crème fraiche
- 1 dl mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon/lime juice
- salt och peppar
Salad
- 250 g green kale
- ¼ red cabbage
- ¼ white cabbage
- ½ fennel
- 1 apple
- 1 dl walnuts
- 1 pomegranate
Instructions
- Mix the crème fraiche with the mayonnaise, mustard and squeezed lemon. Season with salt and pepper. Set aside
- Shred cabbage and fennel on a mandolin, put in ice cold water for 30 min to get the cabbage "crunchy". Pour off the water.
- Divide the apple into small pieces. Roughly crush the walnuts. Mix everything in a large bowl.
- Pour over the dressing, either over the sallad or over serving bowls. Spread the pomegranate seeds over the salad.Enjoy the magic of Cuisine
